Three Fabulous Flatbread Lunches

Are your lunches getting boring? Tired of the same old sandwiches? Skip the ubiquitous sliced bread and boiled ham, and give your lunch new life with one these three flatbread sandwich altrnatives that are bursting with flavor.

Mediterranean Vegetarian Flatbread

Even if you're not a vegetarian, you will love the taste of these healthy flatbread sandwiches.

Mix one can of garbanzo beans, also known as chickpeas, with 1/4 cup red wine vinegar, 1 tablespoon minced garlic, two teaspoons of cumin, one teaspoon dried coriander, 2 tablespoons each of chopped parsley and cilantro, the juice and zest of one lemon, and coarsely ground cracked black pepper. This mixture can stay marinating in the refrigerator all week.

When lunch time rolls around or it's time to pack your lunch, spoon the chickpea mixture onto your flat bread, and then top it with tomato wedges, cucumber slices, minced Bermuda onions, and Kalamata olives. You can also add feta cheese for some extra tang and alfalfa sprouts or spinach for some greens. Drizzle with a Greek salad dressing or vinaigrette.

This flatbread is packed with protein, fiber, and vitamins.

Chicken Gyro

This easy flatbread sandwich is packed with flavor. Grill or sauté two large chicken breasts. Season with salt, pepper, garlic powder, and dried tarragon. Once they are cooked, julienne the chicken into bite-sized pieces. If you're short on time, you can shred the meat from a rotisserie chicken instead.  

Make a tzatziki sauce with 1 1/2 cups Greek yogurt, 1 clove minced garlic, and a 1/4 cup chopped mint leaves. Season with salt, and set it aside to give the flavors time to meld.

While a traditional tzatziki sauce has cucumbers in it, they can make the sauce watery, so prepare this cucumber salsa instead. Peel and seed one large cucumber. Dice the cucumber, and then toss with one pint of grape or cherry tomatoes that have been quartered, one small minced Bermuda onion, 1/2 cup chopped flat leaf parsley, 1/4 cup olive oil, and the juice and zest of one lemon.

When you're ready to eat, place some chicken strips on flatbread, top with a few spoonfuls of cucumber salsa, and add the yogurt tzatziki sauce.  

Hummus Dip

This quick and easy lunch comes together in no time. Use prepared hummus to save time. Mix 1 cup hummus with 1/4 cup crumbled feta cheese, 1/4 cup minced Bermuda onion, and 1/4 cup chopped Kalamata olives. Rip pieces of flatbread and use it as a "chip" for this flavorful dip.
